- Prepare gm of Bitter gourd-250.
- You need of Soyabean-50gm.
- Prepare of Onion-4(finely chopped).
- You need of Tomato-2(Finely chopped).
- Prepare tsp of Ginger garlic paste-2.
- Prepare of Ginger-10 gm for Gravy.
- It's of Onion cloves-10/12 for Gravy.

- Take Soyabean soaked in water.when Soyabean swells then squeez out the water and make Crumbs of soyabean.take Bitter Gourd peeled off and remove the middle portion by making a cut.peeled part of the Bitter Gourd not throw.just chopped finely.now malinate the Bitter Gourd in 1 tsp of salt and 1/2 tsp of turmeric powder.same thing with the Peeloff portion of the Bitter Gourd for 30 minutes.then washed well..
- Take a pan add Dry coriander seeds, fennel seeds roast.when these seed gets roast then add cumin seeds, black Cumin seeds and Fenugreek seeds and roast.cool the roasted seeds then make a powder.Take another Pan add 2 tbsp of oil add Asafoetida, Cumin seeds then add chopped onion 2 and roast.now add 2 tsp of ginger garlic paste..
- Now add Soyabean Crumbs and roast.then add whole Spices like Red Chilli Powder-1 tsp,Salt 1 tsp, turmeric powder,dried mango powder 1+1/2 tsp,2 tsp of dried roasted seeds powder.mix well.now add coriander leaves..
- Now add lemon juice in the stuffing.take a pan add oil 1 tsp and add finely chopped peeloff part of the Bitter Gourd and roast well.mix it in the stuffing.mix well.now your Stuffing is ready.now steam the Bitter Gourd about 60-70%.now fill the Stuffing in the steamed Bitter Gourd.then binds well with the thread..
- Now shallow fry these stuffed Bitter Gourd. Take a Pan add 2 tbsp of oil add chopped onion 2 and lightly roast.now add ginger Slice and garlic cloves and slightly roast then add tomatoes 2 chopped and Cook until cooked. Now cool down the mix then make a paste..
- Now paste is Ready.Take a Pan add 2 tbsp of oil then add paste and roast well.now add spices like Salt 1 tsp,Red Chilli Powder-1 tsp, turmeric powder 1/2 tsp,garam masala powder 1/2 tsp and roast well..
