  1. Place the minced beef in a bowl and add in fine dices of red onion,crushed garlic,chopped coriander,1 tablespoon coriander powder,1/2 teaspoon of salt,and 1 tablespoon of royco.
  2. Break the two eggs in separate bowls,add the eggs in the mixture of minced beef and mix all the ingredients evenly.
  3. Pour some breadcrumbs on plate and carefully mould the minced beef into balls and pass it through the crumbs and mold.
  4. After moulding the meatballs,let it set for 10 minutes.
  5. Put the pan on medium heat and pour 1/4 cup of vegetable oil,once hot fry the meatballs in batches.
  6. Once ready,remove the meatballs using a slotted spoon and place them on grease absorbent paper.
  7. Wash the tomatoes and cut in rough chunks.
  8. Pour alittle water in the blender and add in the chunks of tomatoes and blend finely.
  9. Pour the oil used in frying in a different pot and use the same pan for the puree'.
  10. Place the puree on medium heat once it starts simmering add in a pinch of salt and 1 teaspoon of coriander powder,stir and gently add in the fried meatballs and let it reduce and thicken. Bring to boil for 25 minutes. Ready to serve.
