Baingan with twist. Any recipe evolves and grows with every replication by a new chef. This is Monali's take on the very famous and very lovable 'Baingan Ka Bharta'. Hi friends, one of my favorite dish that I'm sharing with all of you and specially for those who hate vegetables.

Baingan with twist Baigan Bharta is a very old Indian recipe made from Eggplant which is originally grown in Indian subcontinent. Knowing the various benefits of consuming egg-plants, one can try not to avoid this vegetable from their meals. Baingan bharta is a popular north Indian dish where fire roasted eggplant is mashed and cooked with spices. You can have Baingan with twist using 13 ingredients and 4 steps. Here is how you cook it.

Ingredients of Baingan with twist

  1. You need 1 of big size baingan(brinjal).
  2. Prepare 4 spoons of besan.
  3. It's 1 of chopped onion.
  4. It's 1 of chopped tomato.
  5. You need Few of Green chilli.
  6. It's as per taste of Salt.
  7. Prepare 1 tsp of Pepper powder.
  8. Prepare 1/2 tsp of Garam masala.
  9. Prepare Pinch of haldi.
  10. Prepare 1/2 tsp of Amchoor powder.
  11. Prepare 1/2 tsp of saunf.
  12. It's 1 tsp of Kasturi methi.
  13. You need 1/2 tsp of carom seeds(ajwain).

It's best served with fresh rotis or parathas. In Pakistan, baingan (aubergines) are available only during peak summer season. Perhaps that's why whenever summers are here, I immediately think of the nice old baingan.   1. First take brinjal and cut round in shape and soak in water..
  2. Now take a bowl add besan, onions, tomatoes, salt, pepper,garam masala,dhaniya powder,saunf,amchoor,and ajwain..and by adding water make a smooth batter..
  3. Now take nonstick tawa or pan. Add oil or ghee put the brinjal slices and fill the batter..
  4. Now cover it with lid and cook on low flame for 10 min on one side and now turn the pieces and again cook for 10 min on the other side. Now enjoy it with roti,paratha, raita or any pickle..
