- Mix the dry rub thoroughly....

- Dredge on as much of the remainder as will stick, and put the chicken on a baking tray or in an oven proof dish.
- Cook in the oven at gas mark 5, 190Β°C or 375Β°F for 35-40 minutes. The chicken is cooked if the juices run clear when pierced with a skewer. If using a meat thermometer, the temp. should be 75Β°C or 165Β°F.
- Remove from the oven and allow to rest for several minutes. Alternatively, deep fry at 180Β°C or 355Β° F for about 1 minute until the skin is crisp.
- Finally, toss the wings in the sauce, or serve it as a dip. I'm using Frank's Redhot Buffalo Wings Sauce.
