  2. Once cooking is done let the ribs cool down for 1h in the liquid off the burner, once they are relatively cool place on a baking rack and apply favorite spice rub while meat is a lil wet so the spices soak up with the liquid while ribs fully cool down.
  3. If your planning on baking directly after cooking same steps aply just no nees to let ribs cool down fully (initial 1h suggested however to let the meat re-absorb some juices).
  4. Baste with honey and or favorite bbq sauce and bake for 30 mins.

It's easier if you start at the end of the slab and use a paper towel to grip the membrane.
