2 Mexican bolillo rolls or baguettes, sliced in 1/2 horizontally
4 eggs, fried
1/2 cup Cotija cheese, crumbled
Cilantro for garnish
Black Bean Spread:
2 tablespoons vegetable oil
1/2 cup diced yellow onion
1 jalapeno pepper, seeds removed, diced
2 garlic cloves, sliced
1 (15 ounce) can black beans, rinsed and tired
half teaspoon floor cumin
1 lime, juiced
1 cup fowl inventory
Salsa Fresca:
2 ripe tomatoes, seeds removed, diced
1/4 cup diced red onion
half jalapeno pepper, seeds removed, diced
1/4 cup fresh cilantro, minced
1 lime, juiced
salt and pepper to taste
